With patriotism in the air on completion of our nation’s 70th year of independence on this August 15th, I’m sure that all of you are in the mood for doing something that speaks about your love for the country that has been your home as long as you can remember. Raising flags and updating statuses is something that nearly everyone does, so why not give a shot at something new and unique this Independence Day. We present to you, a way to make your meals more devoted to the freedom of the nation, by redecorating them into the tricolor! So it’s time to revive the feeling of ‘desh bhakti’ within yourself and your guests this independence day when you sit down to your next meal (or drinks)!
1. Tricolor Dhokla
Ingredients:
For batter: Rice flour- 3 cups
Black gram flour- 1 cup
Sour yogurt- 1 cup
Sugar- 1 tbsp
Salt as per taste
Soda bicarbonate/ ENO- ¼ tsp
Spinach puree- ¼ cup
Green chilli- 1
Small piece of ginger- 1
Gun powder- t tbsp
Kashmiri red chilli powder- ¼ tsp
Oil- 1 tsp
Grated coconut- 2 tbsp
Chopped coriander leaves
Seasoning
Oil- 1 tsp
Mustard seeds- 1 tsp
White sesame seeds- 1 tsp
Method:
- Take a large bowl and mix the rice flour, black gram flour and yogurt. Add warm water to it to make a smooth batter. Soak it overnight for fermentation.
- Add salt, sugar and soda to the batter and mix well.
- Divide the batter into 3 equal parts:
Green Part: Mix the batter with spinach puree and ginger- green chilli paste.
Orange part: Mix the batter with gun powder and chilli powder
Keep the white batter as it is for the white part.
- Grease a plate and pour the green batter into it and then steam it.
- After this is done, pour the plain white batter over it and steam again.
- For the final layer, add orange batter over it and steam it.
- Remove it from the hot plate and allow it to cool.
- Cut the Dhokla into any shape as per your choice and arrange the pieces in a plate.
- Season it with the seasonings mentioned and garnish it with coconut powder and coriander leaves.
- Serve it with green or red chutney.
2. Tricolor Mocktail
Ingredients:
Kiwi syrup- 2 tbsp
Cream based soda- 2 tbsp
Orange syrup- 2 tbsp
Sugar syrup- ½ tsp
Crushed ice
Method:
- Take a mocktail glass and first pour in the kiwi syrup, then the cream based soda and finally some crushed ice.
- Pour orange syrup on top of the glass.
- Put in more crushed ice and sugar syrup over it. Keep in mind to not mix it.
- Serve the chilled tricolor mocktail and refresh your taste buds.
3. Tricolor Sandwich
Ingredients:
Brown bread- 8 slices
White bread- 4 slices
For orange layer: Grated carrot- 1 cup
Low- fat mayonnaise- 2 tbsp
Salt to taste
For Green layer: Cottage cheese (paneer)- 1 cup
Green chutney- 4 tbsp
Salt to taste
Method:
- For the orange layer; mix carrots, mayonnaise and salt together.
- For the green layer; mix cottage cheese, green chutney and salt together.
- Place a slice of brown bread on a plate and spread the green layer evenly over it.
- Place a slice of white bread above it and then evenly spread an orange layer over white bread.
- Top it with another slice of brown bread and press gently.
- Cut each sandwich into three parts and serve.
4. Tiranga Paneer Tikka
Ingredients:
Cottage cheese (paneer)- 200g
Green chutney- 1 tbsp
Grated khoya- 2 tbsp
Saffron (kesar)- 5-6 threads
Salt to taste
Red chilli powder- ½ tsp
Hung curd- ½ cup
Gram flour- t tbsp
Ginger- garlic paste- ½ tbsp
Chopped fresh coriander leaves- 2 tbsp
Chopped green chillies- 2-3
White pepper powder- 5g
Lemon juice- ½ tbsp
Melted butter
Method:
- Out of 200g of paneer, grate 20g and cut the rest of it into one-and-a-half-inch cubes. Slice each of the cubes into three layers without cutting through.
- In a bowl, mix the khoya, saffron and salt together.
- Take another bowl and mix grated cottage cheese, chilli powder and salt.
- Take one cube and spread green chutney over the first layer, the khoya mixture on the second layer and saffron cottage cheese mix on the last layer.
- Mix the yogurt, gram flour, ginger-garlic paste, fresh coriander, green chillies, white pepper powder and lemon juice in a deep bowl together.
- Add the stuffed paneer cubes and mix gently so that all the cubes are evenly coated with the marinade. Keep it aside for an hour.
- Thread the cubes onto skewers and roast in a clay oven grilled over charcoal at moderate heat for 5-6 minutes. Baste it with melted butter once in between.
- Serve hot.
5. Cornitos Cheesy Tricolor Tacos
Ingredients:
Taco dinner kit- 1 packet (6 Taco shells)
Paneer/ Tofu cubes- 125g
Red bell pepper cubes- 50g
Yellow pepper cubes- 50g
Cheese Dip- 150g
Jalapeno sliced- 50g
Lettuce- 50g
Salt to taste
White pepper powder- 5g
Cornitos- 1 packet
Taco seasoning
Chunky salsa dip- 50g
Olice oil- 1 tsp
Method:
For filling:
- Marinate the paneer/tofu with salt, white pepper powder and olive oil. Keep it aside for 10-15 minutes.
- Preheat your microwave or grilling tool. Pour a little oil over them and grill the paneer/tofu until done.
For assembling the tacos:
- Arrange the taco shells on a taco boat.
- Line your taco shells with lettuce and put all the filling inside of grilled paneer cubes and seasoned bell pepper cubes.
- Spread the cheese sauce evenly on top of the filling and sprinkle on some Taco seasoning.
- Serve the tacos with chunky salsa dip.
